Buffalo Chicken Flatbread Pizza 7/1


          It's always a great time when going out to your favorite "wing bar", and this recipe is a quick and easy meal that can easily feed 1 person to a whole party! When I came across this recipe, I immediately thought, "this is going to be delicious"... and boy was I right! :-)




Ing.
- 2T Extra Virgin Olive Oil (EVOO)
- 1 lb. boneless, skinless chicken thighs (or breasts) cut into bite-size pieces
- Salt and Pepper
- 2T butter
- 1/2 cup hot sauce (I recommend Frank's Red Hot original)
- 4 flat bread rounds
- 3 ribs of celery from the heart, sliced thinly down the bias
- 3/4 cup blue cheese crumbles (usually found in the specialty cheese section of any grocer)

  • Preheat oven to 450*
  • Place a large skillet over medium-high heat with the 2T of EVOO
  • Season the chicken pieces with S&P (I also seasoned with garlic to add a little extra flavor) and add to the preheated skillet. Saute until cooked through & golden brown. (about 4-5 mins.)
  • Once chicken is done cooking, reduce the heat to medium & add the butter to the skillet to melt.
  • Add the hot sauce & cook, stirring occasionally, until the sauce has thickened and coats the chicken. (roughly 2-3 minutes) Also, be careful not to breathe too deep over the pan... the hot sauce fumes can easily burn your sinuses!
  • When the chicken is ready, place the flat bread rounds on a baking sheet & divide the chicken equally. We used Pita bread in place of flat-bread, and it came out just as excellent. :) Also, when putting the chicken onto the flat bread, I poured the extra sauce that was still left in the pan on top of them.
  • Scatter the celery over the chicken and top each round with blue cheese crumbles. Bake until the bread is crisped and the cheese has melted. (about 5 minutes)

When I made this one, I just simply cut the recipe in half to make it for two. It can also easily be doubled, tripled, etc. to accommodate for your needs. When serving, no sides are really necessary! Maybe a small side tossed salad, or some chips and salsa! We enjoyed ours with some white wine, Root:1 Sauvignon Blanc. For that authentic "wing bar" taste, serve it with your favorite cold beer.

I know for sure we will be having this one again!
