Honey-Butter Glazed Chicken



So we were sitting around being lazy, playing video games, and laying on the couch reading a book. Having a great evening, but then realized we were very hungry -_- I've recently downloaded the Food Network App on my phone... and must say I am in love! I'm never sure what I'm in the mood for, and its a great way to look up recipes for ingredients that I already have.  I stumbled across this recipe, but altered it to feed the two of us, and using chicken breasts instead of an entire chicken. Whipped this together, and it was outstanding!!!!! This can be served with steamed vegetables, mashed potatoes, or even a simple side salad... the actual recipe calls for mashed sweet potatoes. Or any other sides you may enjoy




Ing.
  • 2 chicken breasts, rinsed and patted dry
  • 1 T salt
  • 1/2 tspn fresh black pepper
  • 6 T honey
  • 1 lemon, zested
  • 1 T lemon juice
  • 1 T room temperature unsalted butter
  • 1 T fresh thyme leaves
 1. Preheat the oven to 400*F
 2. Season the chicken breasts on both sides with salt and pepper.
 3. In a small bowl, combine the honey, lemon zest/juice and butter.
 4. Place the breasts on a cookie sheet, and roast until lightly browned. (~15 mins.) Using a pastry brush, brush half of the honey mixture over the chicken, as well as sprinkling half the thyme over the chicken and return the chicken to the oven. Continue to cook another 30 minutes. Remove the chicken from the oven and brush the remaining honey blend and sprinkle the remainder of the thyme over the chicken.
 5. Transfer to a platter to rest for 10 mins.
 6. Drizzle the chicken with any remaining pan juices, and serve immediately.

I hope everyone will enjoy this tasty meal as much as I did. It isn't too hard of a recipe, and comes out absolutely amazingly!
