Cinnamon Sugar Donut Muffins

Happy fall everyone!! I don't know about everyone else, but fall is definitely my favorite time of year.. the weather is beautiful, all the trees start to turn colors, Halloween... and the return of delicious smells from candle stores... and the kitchen! With the return of fall, comes the return of cinnamon sugar donuts and apple cider, yum! While I was at my local bath and body works, I came across this cinnamon sugared donuts candle, and it gave me the craving for them. This recipe is the same, except makes muffins




Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1.5 tspn baking powder
  • 1/2 tspn salt
  • 1/2 tspn cinnamon
  • 1 T butter, melted 
  • 2 eggs
  • 3/4 cup milk
  • 1/4 cup honey
  • 2 tspn vanilla
For topping

  • 2 T butter, melted
  • 1/4 cup sugar
  • 1.5 tspn cinnamon
  1. Preheat oven to 400*F
  2. In a large mixing bowl, mix together flour, sugar, baking powder, salt and cinnamon. Set aside
  3. In a medium mixing bowl, combine butter, eggs, milk, honey and vanilla. Wisk together very well.
  4. Add your wet mixture to your flour mixture, and stir until just mixed. Make sure not to over stir, otherwise they will come out tougher after baking.
  5. Using a cupcake/muffin sheet, lightly spray with non-stick cooking spray, and fill each cavity about 3/4 full.
  6. Bake for  approx. 20 minutes, or until rim is golden brown.
  7. Allow to cool in sheet for about 5 minutes
  8. While the muffins are still warm, brush each top with melted butter, and sprinkle with cinnamon sugar mixture. (I like to drown them in the cinnamon sugar..)
These are definitely one of my favorites treats in the fall... and a full batch is easy and fast to make... so you can stockpile your kitchen with delicious fall snacks with ease.
