Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1.5 tspn baking powder
- 1/2 tspn salt
- 1/2 tspn cinnamon
- 1 T butter, melted
- 2 eggs
- 3/4 cup milk
- 1/4 cup honey
- 2 tspn vanilla
- 2 T butter, melted
- 1/4 cup sugar
- 1.5 tspn cinnamon
- Preheat oven to 400*F
- In a large mixing bowl, mix together flour, sugar, baking powder, salt and cinnamon. Set aside
- In a medium mixing bowl, combine butter, eggs, milk, honey and vanilla. Wisk together very well.
- Add your wet mixture to your flour mixture, and stir until just mixed. Make sure not to over stir, otherwise they will come out tougher after baking.
- Using a cupcake/muffin sheet, lightly spray with non-stick cooking spray, and fill each cavity about 3/4 full.
- Bake for approx. 20 minutes, or until rim is golden brown.
- Allow to cool in sheet for about 5 minutes
- While the muffins are still warm, brush each top with melted butter, and sprinkle with cinnamon sugar mixture. (I like to drown them in the cinnamon sugar..)
