We were having our friend Nikole over for dinner, and needed to find something that was easy to make, and this thought came through my mind while shopping for ingredients. Now, they are quite spicy, and if you don't really like spicy foods, you can eliminate the jalapenos, and substitute with sweet peppers. Rave reviews from all, and we actually made these multiple nights in the same week.
Ingredients
- .5 lb steak strips (pan cooking)
- 2 jalapenos, sliced
- 1/2 sweet onion, sliced
- Mexican rice
- 1 Avocado
- flour tortillas
- 1 lime
- 2 turns of the pan of EVOO
- In a large non-stick skillet, heat your oil over medium high heat.
- add your steak strips into the pan, and cook for 2-3 minutes, then flip and repeat.
- Add in your peppers and onions and occasionally stir.
- Squeeze half of a lime into the skillet
- Lower heat to medium low, place a lid on your skillet and let everything simmer for about 5 minutes, or until your onions are browned.
- Take a tortilla, and spoon out some of your rice onto the tortilla. Then place a couple strips of steak onto the rice and top with peppers and onions.
