BBQ Pulled Chicken Sandwiches

These are definitely something that needs to be planned in advance... but when it is, it is absolutely delicious! Not quite the typical barbecue taste, but still amazing! 



Ing.
  • 1 8oz. can reduced-sodium Tomato Sauce
  • 1 4oz. can Chopped Green Chiles, drained
  • 3T Cider Vinegar
  • 2T Honey
  • 1T Sweeter Smoked Paprika
  • 1T Tomato Paste
  • 1T Worcestershire Sauce
  • 2 tspn Dry Mustard
  • 1 tspn Ground Chipotle Chile (found in the spice section of your local grocer)
  • 1/2 tspn Salt
  • 2-1/2 pounds Boneless, Skinless Chicken Thighs (or breasts), trimmed of fat
  • 1 small Onion, finely chopped
  • 1 clove Garlic, minced
  1. Stir tomato sauce, chiles, vinegar, honey, paprika, tomato paste, Wsauce, mustard, ground chipotle & salt in a 6 qt. slow cooker until smooth. Add chicken, onion and garlic; stir to combine.
  2. Put the lid on and cook on low until the chicken can be pulled apart... You will need to prepare for 5 hours of idle time, to do whatever... (go run some errands, go shopping, pay your bills) and then you'll be ready for a delicious meal!
  3. Transfer the chicken to a cutting board and shred with a fork. Return the chiken to the sauce, stir well and serve! 
This goes really well on regular hamburger buns, but would also be quite delicious on submarine buns, or even pretzel rolls!

Also, this makes a lot, so prepare for plenty of leftovers, or just simply invite everyone over for dinner! Whatever the case may be... Enjoy!!
