Simple chocolate chunk muffin cake


This was a great find! Comes out super moist, and is full of delicious chocolate chunks! This one does take a little longer to bake, but in the end is worth the wait!




Ing.
  • 10 T Unsalted Butter
  • Cooking Spray
  • 1/2 tspn Baking Soda
  • 1 tspn Salt
  • 1-1/2 tspn Baking Powder
  • 2-12 cups all-purpose Flour
  • 2 Eggs
  • 1-1/3 cups Granulated Sugar
  • 2 tspn Vanilla Extract
  • 2 cups Sour Cream
  • 1-1/2 cup coarsely chopped Semisweet Chocolate
  1. Liberally spray the bottom and sides of your cake pan. Melt the butter in a small pot over low heat. Remove the pot from the heat and allow it to cool slightly. Reserve.
  2. In a medium bowl, sift together the baking soda, salt, baking powder and flour.
  3. In a large bowl, beat the eggs, sugar, vanilla, and sour cream together until smooth. Add the flour mixture in small batches to the wet ingredients, whisking as you go to avoid lumps. Make a well in the center of the batter and pour in the melted butter. Whisk until smooth. Stir in the chopped chocolate.
  4. Put the batter in your pan, and spread out to level the top. Slide it into the center of the oven and bake until a toothpick poked in the center comes out clean. (40-45 mins) Remove the cake from the oven and allow to cool.
Now this cake can be frosted with Marshmallow Frosting, but I just dusted some confectioner's sugar on top, and that did the trick! I may make this one again in the future, but try it out with the Marshmallow Frosting!!
