Very Berry Chocolate Delight Cupcakes





These are super easy cupcakes, and are full of great flavors! Definitely a great summer option, as berries are in season :) 


 

 Ing.
  • 2 cups all purpose flour
  • 2 cups sugar
  • 1/2 teaspoon Frontier Herb 01476 Frontier Herb Baking Powder- 1x1lb
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup olive oil
  • 3/4 cup water
  • 2 large eggs
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 4 ounces melted unsweetened  baking chocolate
  • 4 ounces of your favorite berries (I used Raspberries and Black Berries)    

      

    1. Preheat oven to 350 degrees and line cupcake sheet with foil liners
    2. Combine all ingredients into a large mixing bowl. Mix on low for 30 seconds and scrape the bowl. Then mix on high for 3 minutes. If you don't have a mixer, then mix by hand until smooth and creamy.
    3. Fill liners 1/2 to 3/4 full of batter. Bake 20-25 minutes, or until toothpick inserted in center comes out clean.
    4. Cool for 10 minutes in pan, then remove and place cupcakes on a wire rack and allow to cool completely.
    5. Frost cupcakes after completely cooled, or dust with confectioner's sugar.
